½ cup almond meal or almond flour (use breadcrumbs for non-low-carb version)
2 teaspoons oregano
1½ teaspoons salt
1½ teaspoons pepper
2 large eggs
20 ounces frozen chopped spinach, thawed and squeezed dry
8 ounces feta cheese, finely crumbled
½ cup chopped parsley
1 small yellow onion, finely chopped
8 cloves garlic, minced
2 pounds ground chicken (93% Lean | 7% Fat)


Instructions

Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
In a large mixing bowl, combine almond meal, oregano, salt, and pepper.
Beat the eggs and mix them into the almond meal mixture.
Add spinach, feta, parsley, onion, and garlic. Mix well.
Gently mix in the ground chicken until just combined.
Using a 1½-inch scoop, form the meat mixture into balls and place on the prepared sheets.
Bake for 15-20 minutes until cooked through.
