  • 16 oz. frozen chopped spinach
  • 8 oz. feta cheese, finely chopped or crumbled
  • 1/2 small yellow onion, finely diced (about 1/4 cup)
  • 3 eggs, divided
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven and Prepare Pastry Start by preheating your oven to 400 degrees F. Take the thawed puff pastry sheet and use a rolling pin to lightly roll it out, smoothing any seams. Cut the sheet into nine squares by dividing it into a 3×3 grid.
  2. Prepare Muffin Pan Press each pastry square into the cups of a 9-cup muffin pan, making sure the pastry fully covers the sides of each cup.
  3. Thaw and Drain Spinach Thaw the frozen spinach by placing it in a mesh sieve and running hot water over it until softened. Thoroughly drain by pressing the spinach with a wooden spoon to remove as much moisture as possible.
  4. Mix Filling In a bowl, combine the drained spinach, crumbled feta, diced onion, and two of the eggs. Season the mixture with kosher salt and black pepper to taste.
  5. Fill Pastry Cups Spoon the spinach and feta mixture generously into each pastry-lined cup in the muffin pan.
  6. Egg Wash Beat the remaining egg in a small bowl. Use a pastry brush to apply this egg wash over the filled pastry tops and edges to ensure a golden, crispy finish upon baking.
