- 16 oz. frozen chopped spinach
- 8 oz. feta cheese, finely chopped or crumbled
- 1/2 small yellow onion, finely diced (about 1/4 cup)
- 3 eggs, divided
- Kosher salt, to taste
- Black pepper, to taste
Instructions
- Preheat Oven and Prepare Pastry Start by preheating your oven to 400 degrees F. Take the thawed puff pastry sheet and use a rolling pin to lightly roll it out, smoothing any seams. Cut the sheet into nine squares by dividing it into a 3×3 grid.
- Prepare Muffin Pan Press each pastry square into the cups of a 9-cup muffin pan, making sure the pastry fully covers the sides of each cup.
- Thaw and Drain Spinach Thaw the frozen spinach by placing it in a mesh sieve and running hot water over it until softened. Thoroughly drain by pressing the spinach with a wooden spoon to remove as much moisture as possible.
