  • 2 plain bagels (alternatively everything, onion, or cheese bagels)
  • 1/2 pound shaved steak
  • 4 eggs, beaten
  • 2 slices American cheese (cheddar or provolone are also suitable)
  • 1 small onion, sliced
  • 3 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1 teaspoon Montreal steak seasoning
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons mustard
  • 1/4 teaspoon dried dill

Instructions

  1. Prepare the Sauce Mix the mayonnaise, mustard, and dried dill in a small bowl until well blended. Refrigerate the sauce until needed, allowing the flavors to meld.
  2. Caramelize the Onions Heat a skillet over medium heat and melt 1 tablespoon of butter. Add the sliced onions and a pinch of salt, cooking until they are golden and slightly crisped. Set aside once done.
  3. Cook the Steak In a separate bowl, toss the shaved steak with Worcestershire sauce and Montreal steak seasoning. Using the same skillet, add another tablespoon of butter and cook the steak until it’s lightly browned. Reintroduce the onions to the skillet, mix, and create two piles of the steak-onion mixture. Place a slice of cheese on each pile and let it melt.
  4. Scramble the Eggs In the same skillet, add the last tablespoon of butter and gently pour in the beaten eggs. Stir occasionally until the eggs are softly scrambled and divide them into two portions.
  5. Assemble the Sandwiches Toast the bagels using a skillet or a toaster until they’re lightly browned and crisp. Spread a generous amount of the prepared sauce on each half of the bagels. Layer the scrambled eggs, followed by the steak and onion mixture, and cover with the bagel tops.
