Ingredients
For the dressing:
1 shallot, peeled and roughly chopped
3 tablespoons fresh ginger, roughly chopped
1 clove garlic
¼ cup white miso paste
2 tablespoons rice wine vinegar
½ teaspoon sesame oil
⅓ cup oil
2 tablespoons honey or agave
For the steak bites:
Cooked rice (or other grain of choice)
A couple handfuls of bok choy or any leafy vegetable
1 pound steak (ribeye, sirloin, or skirt), cut into 1.5 inch cubes
2 tablespoons butter or oil
1 teaspoon dark soy sauce
Salt to taste
Instructions
Blend shallot, ginger, garlic, miso paste, vinegar, sesame oil, oil, and honey in a blender until creamy.
Prepare rice and veggies. Cook veggies in steak pan drippings if desired.
Season steak with salt and black pepper.
Heat skillet on medium-high, add butter, and brown. Add soy sauce.
Cook steak in batches without stirring for 30-45 seconds per side.
Serve steak and veggies over rice, topped with miso ginger dressing.
