1 tablespoon olive oil
2 tablespoons butter, divided
6 cloves garlic, minced
1 teaspoon kosher salt
1 ½ teaspoons Worcestershire sauce
1 ½ teaspoons soy sauce
½ teaspoon paprika
½ teaspoon onion powder
½ teaspoon dried oregano
½ teaspoon dried tarragon
½ teaspoon black pepper
¼ teaspoon chili powder
½ teaspoon browning sauce (optional, like Gravy Master)
Fresh chives, chopped for garnish


Instructions

Prepare the Mushrooms: Clean the mushrooms thoroughly and trim any dried pieces from the stems.
Sauté the Mushrooms: In a medium skillet over medium heat, heat the olive oil and 1 tablespoon of butter. Add the mushrooms and season with 1 teaspoon of kosher salt. Stir and cook the mushrooms undisturbed for about 3 minutes, allowing them to begin releasing their juices.
Add Seasonings and Garlic: While the mushrooms are cooking, mix the paprika, onion powder, dried oregano, dried tarragon, black pepper, and chili powder in a small bowl. Add the spice mix and minced garlic to the skillet. Stir and cook for another 1-2 minutes, letting the garlic become fragrant.
Optional Browning: If desired, stir in the browning sauce and cook for an additional 1-2 minutes, until the mushrooms are evenly coated and the sauce has reduced slightly. The browning sauce will give the mushrooms a darker color and a subtle sweetness.
Finish with Sauces: Stir in the Worcestershire sauce and soy sauce. Cook for about 2-3 minutes to reduce the sauce, allowing the mushrooms to absorb the flavors. Finish by adding the remaining 1 tablespoon of butter, stirring until melted and combined.
