12 pounds chicken legs
For the Marinade:
5 cloves garlic, minced
1 Tbsp. olive oil
1 Tbsp. apple cider vinegar
2 Tbsp. fresh lime juice
2 Tbsp. fish sauce
2 Tbsp. chili garlic sauce
2 Tbsp. honey
1/2 stalk lemon grass, minced
2 Tbsp. chopped cilantro
1 green onion, minced
1 1/2 tsp. sesame oil
2 Tbsp. brown sugar
1/2 Tbsp. freshly grated ginger
1 tsp. fresh ground pepper
For the Spicy Thai Glaze:
3/4 cup apple cider vinegar
1/2 cup brown sugar
5 cloves garlic, minced
1 1/2 Tbsp. chili garlic sauce
3 Tbsp. soy sauce
1 Tbsp. honey
1 Tbsp. fish sauce


Instructions

Combine all marinade ingredients in a bowl, excluding the chicken. Whisk until well mixed and the honey is fully incorporated.
Add the chicken legs to the marinade, ensuring they are well-coated. Refrigerate and let marinate for at least three hours, or overnight for best flavor.
Preheat the oven to 400°F (204°C). Alternatively, you can cook these on the grill.
Remove the chicken from the refrigerator and let sit at room temperature for about 20 minutes before cooking.
Place the chicken on a lightly greased baking sheet and bake for 30 minutes.
While the chicken bakes, prepare the Spicy Thai Glaze by combining all glaze ingredients in a small pot. Bring to a boil, then simmer on medium-low heat for about 10 minutes, or until the sauce thickens to your liking. Adjust sweetness by adding more sugar if desired.
After the chicken has cooked for 30 minutes, brush each leg with the Thai glaze and return to the oven. Continue cooking until the internal temperature reaches 165°F (74°C) for safety, or up to 200°F (93°C) for a more tender texture.
Once cooked, toss the chicken legs in the remaining sauce in a large bowl.
Serve garnished with sesame seeds, lime wedges, and thinly sliced green onions. Enjoy with a side of white rice.
