Are you in the mood for a sweet treat that combines the irresistible flavors of fresh strawberries and creamy cheesecake in a bite-sized delight? My Strawberry Cheesecake Bites recipe is just what you need! Not only are these little gems visually appealing, but they’re also incredibly easy to make. Whether you’re hosting a summer party, a special brunch, or just treating yourself, these cheesecake bites are sure to impress.

Ingredients:

  • 25 large strawberries
  • 8 ounces cream cheese, softened
  • 2 tablespoons sour cream
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1-2 tablespoons heavy whipping cream
  • 1/4 cup mini chocolate chips
  • 1 sheet graham cracker

Directions:

  1. Prepare the Strawberries:
    • Wash the strawberries and slice off the stems. Remove the top of each strawberry and carefully hollow out the inside using a paring knife or a small spoon. This creates a little cup for the filling. Also, slice a tiny bit from the bottom of each strawberry to create a stable base.
    • Place the prepared strawberries on a paper towel to drain any excess juice.
  2. Mix the Filling:
    • In a large mixing bowl, combine the softened cream cheese, powdered sugar, sour cream, and vanilla extract. Using a hand mixer or a stand mixer, mix these ingredients until the texture is smooth and creamy.
    • Transfer the cream cheese mixture into a large zip bag or a piping bag fitted with your choice of a decorative tip. Cut a small hole at the corner of the zip bag if using.
  3. Fill and Garnish:
    • Pipe the cream cheese mixture into the hollowed-out center of each strawberry. Be generous and make sure each strawberry is filled nicely.
    • Garnish the top of the filled strawberries with mini chocolate chips and small pieces of crushed graham cracker for that extra crunch. Optionally, add a dollop of cool whip for a creamy finish.

Ingredients

Scale

25 large strawberries
8 ounces cream cheese, softened
2 tablespoons sour cream
1 teaspoon vanilla extract
1 cup powdered sugar
12 tablespoons heavy whipping cream
1/4 cup mini chocolate chips
1 sheet graham cracker

Instructions

Wash and slice the stems from 25 large strawberries or 35 medium strawberries. Pull the top off of the strawberry. Using a paring knife or a small spoon, clean out the hull of the strawberry. Slice a tiny bit of strawberry off the bottom so that you have a stable base.
Set the strawberries on a paper towel to drain out any extra juices. Set aside.
In a large bowl using a hand mixer or in the bowl of a stand mixer, combine cream cheese, powdered sugar, sour cream, and vanilla extract. Mix until smooth.
Spoon the cream cheese mixture into a large zip bag and cut a small hole on the corner, or use a piping bag. You can use a cute piping tip to make the strawberry filling a little fancier.
Pipe the cream cheese mixture into the hole of each strawberry and set them on a baking sheet lined with parchment paper, serving dish, or plate.
Garnish each strawberry with mini chocolate chips and small pieces of graham cracker or even a little glob of cool whip.
