Ingredients
Overnight Oats:
1/2 cup plain Greek yogurt
3 oz cream cheese, softened
1 cup almond milk
2 tbsp pure maple syrup
1 tsp vanilla extract
1 cup old-fashioned oats
1 tbsp chia seeds
1/2 cup strawberries, diced
Pinch of salt
Strawberry Reduction:
1/2 cup strawberries, chopped
1 tbsp pure maple syrup
Instructions
In a large bowl, mix together the softened cream cheese, Greek yogurt, almond milk, pure maple syrup, and vanilla extract until smooth.
Add in the oats, chia seeds, and a pinch of salt. Stir until well combined.
Gently fold in the diced strawberries.
Transfer the oat mixture into an airtight container and refrigerate overnight.
For the strawberry reduction, add the chopped strawberries and maple syrup to a small saucepan over medium heat. Cook until the strawberries soften, then mash them with a spoon and let the mixture simmer for a few minutes. Remove from heat.
In the morning, serve the overnight oats with the strawberry reduction either mixed in or drizzled on top. Enjoy!
