Ingredients
For the brownies:
3/4 cup all-purpose flour
1 1/4 cups granulated sugar
1/2 cup unsweetened or dutch process cocoa
1/2 teaspoon espresso powder
3/4 teaspoon salt
1/2 cup olive, vegetable, or canola oil
3 large eggs
1 teaspoon vanilla extract
Strawberry cheesecake filling:
8 ounces cold block cream cheese
1/2 cup granulated sugar
A pinch of salt
1 cup heavy whipping cream
1/2 teaspoon vanilla extract
1.2 ounces freeze dried strawberries
Chocolate ganache:
3 ounces heavy whipping cream
1 1/2 tablespoons light corn syrup
1/4 teaspoon vanilla extract
6 ounces dark chocolate, chopped
Instructions
For the brownies:
Preheat the oven to 350 degrees F. Line a 9″ square pan with foil and lightly spray with cooking spray. In a bowl, whisk flour, sugar, cocoa, espresso powder, and salt. Add oil, eggs, and vanilla; mix until smooth. Spread into the pan and bake for 25-30 minutes. Allow to cool completely.
For the filling:
Process freeze-dried strawberries into a powder and sift to remove seeds. Beat cream cheese, sugar, salt, and vanilla until smooth. Add strawberry powder and cream; beat to stiff peaks. Spread over cooled brownies and chill.
For the ganache:
Heat cream and corn syrup until simmering. Remove from heat, add chocolate and vanilla, and stir until smooth. Cool slightly and spread over the cheesecake layer. Chill before serving.
