Sugar Cookie Crust:
1 (17.25 oz) package sugar cookie mix
1/2 cup butter, softened
1 egg
Cream Cheese Filling:
4 oz cream cheese, softened
1/2 cup powdered sugar
1/4 tsp vanilla extract
Fresh Strawberry Topping:
1/2 to 3/4 cup strawberries, finely chopped
1/4 cup seedless strawberry jam


Instructions

Sugar Cookie Crust:
Preheat oven to 350°F (175°C).
Combine sugar cookie mix, butter, and egg with a hand mixer until thick dough forms.
Generously spray each cup of a mini muffin tin. Scoop dough into each cup using a small cookie scoop. Press down slightly to level the tops.
Bake for 9-11 minutes. Remove from oven and immediately loosen each cookie with a knife. While still warm, use a tart shaper to create an indentation in the center of each cookie.
Allow cookies to cool completely before filling.
Cream Cheese Filling:
6. In a medium bowl, mix cream cheese, powdered sugar, and vanilla with a hand mixer until smooth.
7. Transfer the filling into a piping bag and pipe it into the indentations of each cookie crust, leaving room for the topping.
Strawberry Topping:
8. Mix chopped strawberries and strawberry jam gently in a small bowl to avoid crushing the berries.
9. Spoon about a teaspoon of the strawberry mixture onto the filled cookie crusts, covering the cream cheese layer.
10. Serve immediately or refrigerate for up to 2 days.
