  • 4 tablespoons salted butter, melted
  • 24 ounces cream cheese (3 packages, room temperature)
  • 2 cups powdered sugar
  • 2 teaspoons lemon juice
  • 1 cup fresh strawberries, puréed
  • 2 teaspoons vanilla extract
  • 1 ½ cups heavy whipping cream
  • 1 batch strawberry shortcake crumble (for garnish)

Instructions

  1. Prepare the Crust: Start by crushing the Golden Oreo cookies either in a food processor or manually using a rolling pin inside a Ziploc bag. Mix the crushed cookies with the melted butter until well combined. Coat a 9-inch springform pan with cooking spray, then firmly press the crust mixture into the bottom and about one inch up the sides. Place the crust in the freezer to set while you prepare the filling.
  2. Make the Filling: Using an electric mixer, blend the cream cheese, powdered sugar, vanilla extract, and lemon juice until the mixture is smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture to maintain its fluffiness.
  3. Assemble the Cheesecake: Divide the cream cheese mixture in half. Mix the strawberry purée into one half of the cream cheese mixture until well incorporated. Pour this strawberry layer over the chilled crust and smooth it out. Add the remaining half of the cream cheese mixture on top and smooth the surface. Cover with plastic wrap and freeze for at least 4-5 hours or ideally overnight.
  4. Garnish and Serve: Once the cheesecake is set, remove it from the springform pan, and coat the top and sides with the strawberry shortcake crumble. Keep the cheesecake in the freezer until ready to serve. Thaw for 10-15 minutes before slicing to make serving easier.
