1 prebaked pie crust (9 inches)
4 cups fresh strawberries, divided
1 cup water
3/4 cup sugar
3 tablespoons cornstarch
1/2 teaspoon red food coloring (optional)
Whipped cream, for garnish


Instructions

Arrange half of the strawberries in the prebaked pie crust.
Mash the remaining strawberries and combine them with water in a medium saucepan. Bring to a boil and simmer for 2 minutes.
Strain the mixture, discarding the strawberry pulp. Return the juice to the saucepan.
Mix sugar and cornstarch; stir into the strawberry juice. Bring to a boil; cook and stir for 2 minutes or until thickened.
Remove from the heat; add food coloring if desired. Cool for 10 minutes.
Pour over the strawberries into the crust. Refrigerate until set.
Garnish with whipped cream before serving.
