Strawberry Lemon Blondies are a delightful fusion of bright flavors and soft textures, making them an appealing treat for any dessert lover. The blondies are beautifully golden with specks of red strawberries, topped with a vibrant, glossy strawberry-lemon glaze that enhances their visual appeal.

For the Blondies:
1 cup unsalted butter, at room temperature
3/4 cup sugar
1 large egg
1/4 cup fresh squeezed lemon juice
2 1/4 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 cup diced fresh strawberries
For the Glaze:
1 cup powdered sugar, sifted
1 tbsp strawberry puree (from about 2 large strawberries)
Lemon juice, about 1 tbsp or as needed for consistency


Instructions

To Make the Blondies:
Preheat the oven to 350°F (175°C). Line a 9-inch square baking pan with parchment paper, leaving an overhang for easy removal.
In a large bowl, cream together the butter and sugar until fluffy. Beat in the egg, then mix in the lemon juice (it’s okay if it doesn’t fully incorporate).
In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
Gently fold in the diced strawberries. Transfer the batter to the prepared pan and spread evenly with an offset spatula.
Bake for 30-35 minutes, until golden around the edges and a toothpick inserted in the center comes out mostly clean. Do not overbake.
Allow to cool completely in the pan on a wire rack.
To Make the Glaze:
Puree the strawberries and strain to get 1 tbsp of puree.
In a small bowl, whisk together the powdered sugar, strawberry puree, and enough lemon juice to achieve a spreadable consistency.
Once the blondies are cool, spread the glaze over the top. Allow the glaze to set before slicing.
