2 tablespoons cocoa powder
Red food coloring
For the Strawberry Mousse:

1 1/2 cups heavy cream, chilled
1/2 cup white chocolate chips, melted
1/2 cup sweetened condensed milk
1/2 cup mascarpone cheese
2 cups diced strawberries, divided
1 teaspoon strawberry extract
Red food coloring, optional
1/4 cup water
2 teaspoons unflavored gelatin
For the Strawberry Whipped Cream:

8 ounces cream cheese, softened
1/2 cup white chocolate chips, melted
1/3 cup white granulated sugar
1 teaspoon strawberry extract
2 cups heavy cream, chilled
Extra strawberries, for garnish


Instructions

Preparing the Chocolate Crust: Preheat oven to 325°F. Double-wrap a 9-inch springform pan with foil; set aside. Pulse chocolate graham crackers into fine crumbs, add melted butter, and pulse again until well coated. Press into the pan to form a crust.
Making the Red Velvet Cheesecake: Beat softened cream cheese, add eggs, sugar, mascarpone, and sour cream until smooth. Mix in cocoa powder and red food coloring. Pour over crust, prepare a water bath, and bake for about 1 hour and 10-15 minutes.
Adding Strawberry Layer: Arrange sliced strawberries over cooled cheesecake.
Making the Strawberry Mousse: Whip heavy cream to stiff peaks. Blend mascarpone, melted chocolate, condensed milk, and strawberry extract. Fold in strawberries and gelatin mixture. Add whipped cream gently. Pour over cheesecake.
Making the Strawberry Whipped Cream: Cream together cream cheese, melted white chocolate, sugar, and strawberry extract. Add heavy cream and whip. Pipe onto the mousse layer.
