Instructions
Preheat the oven to 450°F and line a quarter sheet baking pan with parchment paper.
In a small bowl, whisk together the flour, salt, baking soda, and baking powder.
Cut the butter into small pieces and blend into the flour mixture using a pastry cutter or two knives until crumbly. Gradually add buttermilk, kneading slightly until a dough forms.
On a floured surface, knead the dough 3-4 times, then pat it out to 1″ thickness. Cut out 3-4 biscuits using a floured 3″ biscuit cutter.
Arrange the biscuits on the baking sheet and bake for 9-10 minutes until lightly golden.
For the filling, mix strawberries with sugar, salt, and lemon juice; set aside.
In a clean bowl, beat the cold whipping cream until soft peaks form. Add powdered sugar and vanilla; beat until fluffy.
To serve, slice biscuits in half, top each with whipped cream and strawberries.
