Description

Strawberry Shortcake Pudding Cups are a delightful no-bake dessert perfect for summer gatherings. Each cup is layered with smooth cheesecake-flavored pudding, fresh strawberries, and crunchy golden Oreo crumbs, creating a refreshing blend of creamy and fruity flavors. This easy-to-make treat requires minimal preparation and can be chilled ahead of time, making it an ideal option for busy days.

20 Golden Vanilla Oreos
½ cup freeze-dried strawberries
2 (3.4 oz) packages Instant Jell-o Cheesecake Pudding
4 cups cold whole milk
1 ½ cups strawberries, diced
1 cup whipped cream
810 (4-ounce) plastic cups or jars


Instructions

In a food processor, pulse Golden Oreos and freeze-dried strawberries until finely crushed. If you don’t have a food processor, place the cookies and strawberries in a large ziplock bag and crush them with a rolling pin until fine.
In a large mixing bowl, whisk together the instant cheesecake pudding mix and cold milk until smooth. Fold in the diced strawberries and let it set for 5 minutes.
Add a spoonful of the Oreo strawberry crumb mixture to the bottom of each plastic cup or jar. Layer with the cheesecake pudding, followed by more crumbs, and then add another layer of pudding.
Chill the pudding cups in the refrigerator until ready to serve.
Before serving, top each cup with a tablespoon of whipped cream. Garnish with additional Oreo strawberry crumbs and a strawberry slice, if desired.
