Welcome back to the blog! Today, I’m sharing a scrumptious recipe for a Strawberry Tart that’s perfect for the summer season. This tart combines a buttery crust with a creamy filling and fresh strawberries on top. It’s not just a treat for your taste buds but also a beautiful centerpiece for any gathering.

Ingredients

For the Tart Crust:

  • 1 ½ cups (190 g) all-purpose flour
  • ½ cup (66 g) powdered confectioner’s sugar
  • ¼ teaspoon salt
  • ½ cup (113 g) unsalted butter, cold and cubed
  • 1 large egg, cold and beaten

For the Filling:

  • ⅔ cup (157 g) heavy cream
  • 6 oz (170 g) cream cheese, softened
  • ½ cup (66 g) powdered sugar, divided
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 1 ½ lbs (680 g) strawberries, hulled and sliced

Directions

Tart Crust:

  1. In a food processor, combine the flour, sugar, and salt; pulse to mix.
  2. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
  3. Mix in the beaten egg until the dough begins to cling together. Remove, form into a disc, wrap in plastic, and chill for 1 hour.
  4. Roll out on a floured surface to fit a 9” tart pan. Press into the pan, prick with a fork, and freeze for 30 minutes.
  5. Preheat your oven to 375°F (190°C). Line the crust with parchment and pie weights, and bake for 20 minutes until golden. Allow to cool completely.

Filling:

  1. Whip the heavy cream with half of the powdered sugar and vanilla to stiff peaks.
  2. In another bowl, blend the cream cheese with the remaining sugar and salt until smooth.
  3. Gently fold the whipped cream into the cream cheese mixture.
  4. Spread the filling over the cooled crust, and top with sliced strawberries before serving.
