- 1 lb ground beef
- 1 green pepper, diced
- 1 red pepper, diced
- 1 medium onion, diced
- 1 tsp oregano
- Salt and pepper to taste
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 15 oz can diced tomatoes
- 1 8 oz can tomato sauce
- 1 Tbs balsamic vinegar
- 1 cup long grain white rice
- 1–2 cups Colby Monterey Jack cheese, shredded
Instructions
- Cook the Beef and Vegetables: In a high-sided skillet, combine the ground beef, diced green and red peppers, onion, oregano, salt, and pepper. Cook over medium heat until the beef is no longer pink and the vegetables are tender.
- Add Garlic: Add the minced garlic to the skillet and cook for about 1 minute or until it becomes aromatic.
- Introduce Liquids and Rice: Pour in the beef broth, diced tomatoes, tomato sauce, and balsamic vinegar. Increase the heat to bring the mixture to a boil. Then, stir in the rice, cover the skillet, and lower the heat to maintain a simmer. Cook for 20-25 minutes, until the rice is tender and most of the liquid has been absorbed.
- Add Cheese: Remove the skillet from heat and mix in 1 cup of the cheese until it is evenly distributed throughout. Top the skillet with the remaining cheese, then cover the skillet again to allow the cheese on top to melt.
