1 lb spaghetti or angel hair pasta
1 tbsp olive oil
1 small yellow onion, diced
1 green bell pepper, diced
4 cloves garlic, minced
1 to 1 1/4 lb lean ground beef
1 tsp Italian seasoning
1/2 tsp dried parsley or 1 tsp fresh parsley, chopped
1/2 tsp kosher sea salt
1/4 tsp ground black pepper
1/2 cup tomato paste
2 cups cream of tomato soup or your favorite pasta sauce
1 1/2 cups medium cheddar cheese, grated or sliced


Instructions

Preheat the oven to 350°F (177°C).
Cook the pasta according to package instructions, drain and set aside.
In a large oven-safe pot, heat olive oil over medium heat. Add onion and bell pepper; sauté until tender, about 5 minutes.
Add garlic and sauté until fragrant. Incorporate the ground beef, breaking it up as it browns.
Once the beef is fully cooked, stir in Italian seasoning, parsley, salt, pepper, and tomato paste. Mix in the tomato soup.
Add the cooked pasta and 1/4 cup of cheese to the beef mixture, tossing to combine.
Top with the remaining cheese and bake in the oven for 20 minutes, or until the cheese is bubbly and golden.
Let cool for 6-8 minutes before serving. Garnish with fresh parsley if desired.
