Ingredients
1 lb. chicken thighs 🍗
2 tablespoon Italian seasoning 🌿
½ teaspoon salt 🧂
½ teaspoon black pepper ⚫️
For the sauce:
2 tablespoon olive oil 🫒
4 garlic cloves, minced 🧄
¼ cup California Sun Dry sun-dried tomatoes, sliced 🍅
¾ cup parmesan cheese 🧀
1 cup milk of choice 🥛
½ cup water 💧
Fresh basil for garnish 🌿
Instructions
1️⃣ Mix the Italian seasoning, salt, and pepper together, then pour onto a large plate. Coat each chicken thigh with the seasoning. 🧂🍗
2️⃣ Heat a large skillet (preferably cast iron) over medium heat and sear the chicken for 6-7 minutes per side, or until fully cooked. You may need to add 1 tablespoon of olive oil to the skillet. Once the chicken is cooked, remove it from the skillet using kitchen tongs. 🍳
3️⃣ In the same skillet, combine all the sauce ingredients (olive oil, garlic, sun-dried tomatoes, parmesan cheese, milk, and water). Reduce heat to medium-low, stirring until the cheese has melted. 🧄🧀🥛
4️⃣ Let the mixture simmer for about 5 minutes to thicken. Then, place the cooked chicken back in the skillet and top it with fresh basil. 🌿
