  • 1 cup all-purpose flour

  • 1 tablespoon lemon zest (finely grated)
  • 3 large eggs (room temperature)
  • 1 ½ cups granulated sugar
  • ½ cup all-purpose flour (sifted)
  • Powdered sugar (for dusting)

Directions

Preparation

  1. Preheat your oven to 350ºF (177ºC).
  2. Lightly spray an 8” x 8” baking pan with a flour-based baking spray.
  3. For easier removal, place a parchment paper sling into the pan, securing with binder clips if necessary.

Shortbread Crust

  1. In a mixing bowl, using a hand mixer or a stand mixer with a paddle attachment, beat the butter, flour, and powdered sugar until it forms light yellow loose crumbs.
  2. Press this mixture into the bottom of the prepared pan and chill in the freezer or refrigerator for 10-15 minutes.
  3. Bake the crust for 15-18 minutes or until light golden brown.

Lemon Curd Filling

  1. While the crust is baking, prepare the lemon curd filling.
  2. Mix lemon juice, lemon zest, eggs, granulated sugar, and sifted flour with a mixer until well blended.
  3. Pour the mixture over the slightly cooled crust.

Baking and Finishing

  1. Return the pan to the oven and bake for 25-30 minutes, until the top is nearly set with a slight jiggle in the center.
  2. Allow the lemon bars to cool completely, then refrigerate for at least 1 hour or overnight.
  3. Dust with powdered sugar before serving.
