The Sweet Chilli-Pineapple Sauce is a delightful fusion of sweet, tangy, and spicy flavors that perfectly complement each other. Ingredients
1.5 cups white sugar
1 cup pineapple juice
½ cup rice vinegar or apple cider vinegar
1 tbsp minced garlic
1–2 tbsp red chili flakes (adjust based on preference for heat)
1 tbsp tomato ketchup (optional)
1 teaspoon salt (adjust to taste)
2 tbsps cornflour
4 tbsps cold water
Instructions
In a large heavy-bottomed pan, combine sugar, pineapple juice, vinegar, and salt. Bring to a boil over medium heat.
Add the chili flakes, minced garlic, and ketchup to the pan. Continue to boil for 5 minutes, stirring occasionally.
Mix the cornflour with cold water until smooth. Reduce the heat and gradually stir in the cornflour mixture to avoid lumps.
Simmer the sauce on low heat until it thickens to a desired sauce-like consistency. Note: The sauce will further thicken as it cools.
Transfer the cooled sauce to a sterilized bottle and refrigerate until needed.
