These Sweet Potato Bites with Feta offer a beautiful combination of tender, earthy sweet potatoes and creamy, tangy Feta, complemented by aromatic herbs. This appetizer is both simple to make and sophisticated to serve, making it ideal for gatherings or cozy home snacking.
Ingredients
3 long, thin orange-flesh sweet potatoes (about 1.5 pounds)
2 tablespoons olive oil (for brushing or spraying)
2 teaspoons Italian Herb Blend (or any all-purpose seasoning)
4 ounces Feta cheese, crumbled
3 tablespoons Greek yogurt or sour cream
1/2 teaspoon Greek seasoning
1/4 cup thinly sliced green onion
Instructions
Preheat oven to 450°F (220°C).
Peel the sweet potatoes and trim off the ends. Slice each into 1/2-inch thick rounds.
Using a melon baller, scoop a small well in the center of each slice.
Spray or brush a baking sheet with olive oil, arrange sweet potato slices (well-side up), spray with olive oil, and sprinkle with Italian Herb Blend.
Bake for about 25 minutes until edges begin to brown.
Meanwhile, mash Feta cheese in a bowl with a fork. Add Greek yogurt or sour cream, Greek seasoning, and green onions. Stir to combine.
Remove sweet potatoes from the oven and fill each well with the Feta mixture. Return to the oven and bake for another 5 minutes until the cheese starts to melt. Serve warm.
