4 sweet potatoes, peeled and sliced into 1-inch rounds (about 2 lbs)
¼ cup salted butter, melted
½ teaspoon salt
2 tablespoons maple syrup
About 12 regular-sized marshmallows, halved
About 24 pecan halves


Instructions

Preheat your oven to 425°F (220°C) and grease a sheet pan with butter or nonstick spray.
Arrange the sweet potato rounds on the prepared sheet pan and drizzle the melted butter over the top. Toss to ensure the sweet potatoes are evenly coated.
Roast in the oven for about 20 minutes. Flip the sweet potato rounds over (the bottoms should be browned) and roast for another 15-20 minutes, until fork-tender.
Remove the pan from the oven and set the oven to broil. Drizzle the maple syrup over the roasted sweet potatoes and gently toss to coat.
Top each sweet potato round with a halved marshmallow. Broil for 1-3 minutes until the marshmallows are lightly toasted—keep a close eye to prevent burning.
Once out of the oven, immediately press a pecan half into the top of each marshmallow. Serve while warm and enjoy!
