For the crust:

1 (9-inch) unbaked pie crust
For the filling:

1 lb sweet potatoes (with skin) 🍠
½ cup (114g) butter, softened 🧈
¾ cup granulated sugar 🧂
½ cup milk, at room temperature 🥛
2 large eggs, at room temperature 🥚🥚
2 tsp vanilla extract 🍦
1 tsp ground cinnamon 🌰
½ tsp ground nutmeg


Instructions

1️⃣ Bake the sweet potatoes: Preheat your oven to 400°F (200°C). Scrub the sweet potatoes and prick them a few times with a fork. Place on a baking sheet and bake for 45-50 minutes until tender. Remove from the oven and let cool until they can be handled. Peel off the skins. 🍠🔥

2️⃣ Prepare the filling: Reduce oven heat to 350°F (175°C). In a large mixing bowl, mash the peeled sweet potatoes. Add butter and mix until smooth. 🧈🍠

3️⃣ Mix ingredients: Add sugar, milk, eggs, vanilla extract, cinnamon, and nutmeg to the mashed sweet potatoes. Mix until well combined and smooth. 🥣

4️⃣ Fill the crust: Pour the sweet potato mixture into the unbaked pie crust. 🥧
