Description

This Swiss Melt Potato Rösti combines the rustic charm of golden, crispy potatoes with the rich, melty joy of Jarlsberg cheese, creating a symphony of flavors and textures. It’s not just a dish; it’s a culinary journey to the heart of Swiss comfort food, perfectly balanced with a touch of green onion or chives for an extra layer of flavor.


Ingredients

2 lb thin-skinned potatoes
Canola oil, for cooking
Butter, for cooking
Salt and pepper, to taste
2 green onions or a few chives, chopped
1/21 lb Jarlsberg cheese, grated


Instructions

Cook the potatoes either by baking or boiling in a saucepan for 15 minutes until just tender. Allow to cool completely.
Grate the potatoes coarsely. Heat a 9 or 10-inch skillet over medium-high, add oil and a bit of butter, then layer half of the grated potatoes in the pan, seasoning with salt and pepper.
Add chopped green onions and cook until the bottom turns golden.
Evenly distribute all the Jarlsberg cheese over the potatoes, then cover with the remaining potatoes. Once the bottom is golden, invert the rösti onto a plate, add more butter to the pan, and slide the rösti back in, crispy side up. Cook for another 5-7 minutes.
Slide onto a cutting board, optionally top with more onions or chives, and serve in wedges.
