1 lb Ground Beef 🥩
1 Taco Seasoning Packet 🌶️
8 Flour Tortillas (taco size) 🌮
3 Tablespoons Oil 🛢️
30 oz Can Refried Beans 🫘
1/2 Cup Mild Salsa (not the kind with liquid) 🍅
10 oz Can Red Enchilada Sauce 🌶️
2 Cups Shredded Cheddar/Jack Cheese 🧀
1/2 Cup Sliced Olives 🫒
2 Roma Tomatoes – chopped 🍅
Shredded Lettuce 🥬
Sliced Green Onions 🌿
1/2 Cup Sour Cream 🍦


Instructions

1️⃣ Prepare ground beef and taco seasoning according to package instructions. Use a potato masher to break ground beef into smaller crumbles. Set aside. 🥄

2️⃣ Heat oil in a fry pan over medium/high heat. Fry each tortilla until lightly browned and crisped. Use just enough oil to grease the bottom of the pan. 🍳

3️⃣ Preheat oven to 375ºF (190ºC). 🔥

4️⃣ Place one tortilla on a greased rimmed baking sheet. Top tortilla with refried beans, spread. Next, layer taco meat and salsa. Top with a second tortilla. Coat tortilla with enchilada sauce. Top with shredded cheese, olives, tomatoes, and a little more cheese. Repeat this process 3 more times to make 4 Mexican Pizzas in total. 🥙🧀

5️⃣ Bake pizzas for 5-7 minutes to heat and melt cheese. ⏳

6️⃣ Slice and serve topped with shredded lettuce, sliced green onions, and sour cream. Enjoy! 🍕🥗
