1 lb Ground Beef ๐ฅฉ
1 Taco Seasoning Packet ๐ถ๏ธ
8 Flour Tortillas (taco size) ๐ฎ
3 Tablespoons Oil ๐ข๏ธ
30 oz Can Refried Beans ๐ซ
1/2 Cup Mild Salsa (not the kind with liquid) ๐
10 oz Can Red Enchilada Sauce ๐ถ๏ธ
2 Cups Shredded Cheddar/Jack Cheese ๐ง
1/2 Cup Sliced Olives ๐ซ
2 Roma Tomatoes – chopped ๐
Shredded Lettuce ๐ฅฌ
Sliced Green Onions ๐ฟ
1/2 Cup Sour Cream ๐ฆ
Instructions
1๏ธโฃ Prepare ground beef and taco seasoning according to package instructions. Use a potato masher to break ground beef into smaller crumbles. Set aside. ๐ฅ
2๏ธโฃ Heat oil in a fry pan over medium/high heat. Fry each tortilla until lightly browned and crisped. Use just enough oil to grease the bottom of the pan. ๐ณ
3๏ธโฃ Preheat oven to 375ยบF (190ยบC). ๐ฅ
4๏ธโฃ Place one tortilla on a greased rimmed baking sheet. Top tortilla with refried beans, spread. Next, layer taco meat and salsa. Top with a second tortilla. Coat tortilla with enchilada sauce. Top with shredded cheese, olives, tomatoes, and a little more cheese. Repeat this process 3 more times to make 4 Mexican Pizzas in total. ๐ฅ๐ง
5๏ธโฃ Bake pizzas for 5-7 minutes to heat and melt cheese. โณ
6๏ธโฃ Slice and serve topped with shredded lettuce, sliced green onions, and sour cream. Enjoy! ๐๐ฅ
