1 Box Jiffy cornbread mix
1 ½ lb. Ground beef
1 Package taco seasoning
1 C. Sour cream
½ Medium onion, chopped
1 Tomato, chopped
1 C. Shredded lettuce
1 + ½ C. Shredded taco blend cheese


Instructions

Preheat the oven to 350°F (175°C).
Prepare the cornbread mix according to the package directions and place it into a well-greased 9×9 baking dish.
Bake for 20 minutes, then let cool slightly.
While the cornbread is baking, sauté the ground beef and chopped onion in a skillet over medium-high heat until the meat is browned and the onions begin to soften.
Stir in the taco seasoning.
Layer the cooked meat mixture on top of the cornbread in the baking dish.
Mix together the sour cream and 1 cup of cheese, and spread over the meat.
Bake for an additional 15-20 minutes until the cheese has melted.
Top with shredded lettuce, chopped tomato, and the remaining half cup of cheese before serving.
