Ingredients

Scale
  • 5 ounces pre-washed lettuce, chopped
  • 2 15-ounce cans black beans, rinsed and well drained
  • 16 ounces frozen corn, thawed and well drained
  • 6 medium Roma tomatoes, seeded and cut to a large dice
  • 2 cups shredded cheddar cheese
  • 2 2.25-ounce cans sliced black olives
  • 2 scallions, chopped
  • ½ cup crumbled tortilla chips
  • 1 cup ranch dressing
  • 2 tablespoons taco seasoning

Instructions

  1. Prepare the Salad Base: Start with placing the chopped lettuce at the bottom of a deep, clear glass bowl. Arrange it neatly around the perimeter to create a visual border, then fill in the center.
  2. Add the Black Beans: Follow with a layer of black beans over the lettuce, ensuring an even spread.
  3. Layer Corn Next: Add the thawed and drained corn as the next layer above the black beans.
  4. Continue with Tomatoes: Distribute the large-diced Roma tomatoes evenly as the following layer.
  5. Add Cheese: Sprinkle the shredded cheddar cheese across the top of the tomatoes, covering them completely.
  6. Top with Olives and Scallions: Add the sliced black olives and chopped scallions next, providing an extra layer of flavor and texture.
  7. Finish with Tortilla Chips: Lastly, sprinkle crumbled tortilla chips over the top for a crunchy finish.
  8. Prepare Taco Ranch Dressing: In a separate bowl, mix the ranch dressing with taco seasoning until fully combined. Serve the dressing on the side or drizzle it over the salad just before serving.
