  • Yield: 2 bowls

Description

Elevate your weeknight dinners with these Teriyaki Air Fryer Salmon Bites, where traditional Japanese flavors meet modern cooking techniques. Each bite of salmon offers a crispy exterior that gives way to a succulent, flaky interior, all thanks to the magic of air frying. Nestled on a bed of warm brown rice and accompanied by vibrant edamame and creamy avocado slices, each bowl is a harmonious blend of textures and tastes.

Instructions

2 salmon filets (Atlantic, King, or Sockeye)
2 Tbsp coconut aminos
1 tsp sesame oil
1 Tbsp honey
½ tsp garlic powder
½ tsp sea salt
¼ cup plain yogurt (0% Greek or any type)
1 tsp hot sauce
½ tsp chipotle powder
½ tsp paprika
1 tsp olive oil
2 cups cooked brown rice
½ cup cooked edamame
½ avocado

Notes

Dry salmon filets with a paper towel. Remove skin if necessary and cut into 2-inch cubes.
Mix coconut aminos, sesame oil, honey, garlic powder, and sea salt in a bowl. Reserve a tablespoon of this marinade for later. Toss salmon cubes in the rest of the marinade and let sit for 3 minutes.
Place salmon in the air fryer basket, ensuring space between each piece. Cook at 400°F for 7 minutes.
While salmon cooks, prepare the spicy yogurt sauce by combining yogurt, hot sauce, chipotle powder, paprika, and olive oil.
Assemble the bowls with brown rice, salmon bites, edamame, avocado slices, reserved marinade, and spicy yogurt sauce.
