2 lbs large shrimp, peeled and deveined
1 orange bell pepper, thinly sliced
8 oz sugar snap peas
3/4 cup sweet yellow onion, thinly sliced
2 cups fresh pineapple, cut into bite-sized pieces
Salt and Pepper, to taste
Sesame Seeds, for garnish (optional)
For the Sauce:

1/4 cup soy sauce
1/2 cup water
3 Tbsp brown sugar
2 tsp garlic, minced
2 tsp ginger, minced
1 Tbsp honey
1 tsp toasted sesame oil
1 Tbsp + 1 tsp cornstarch, mixed with 2 Tbsp cold water


Instructions

Make the sauce: In a small pot, combine soy sauce, water, brown sugar, garlic, ginger, honey, and sesame oil. Heat over medium-high until the sugar dissolves, about 3 minutes. Bring to a boil, then add the cornstarch mixture and boil for 1-2 minutes until thickened. Set aside.
Cook the shrimp: In a wok or large saucepan, heat 1 teaspoon of vegetable oil over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes until just cooked. Remove and set aside.
Cook vegetables: In the same pan, add another teaspoon of oil. Add bell pepper, onion, snap peas, and pineapple. Season with salt and pepper and cook for 3-5 minutes until softened.
Combine and serve: Return the shrimp to the pan, pour the sauce over the top, and cook for another 1-3 minutes until everything is heated through. Garnish with sesame seeds if desired.
