  • 6 tablespoons (75 g) granulated sugar, divided
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 cup (245 g) whole milk, warmed (about 105-115°F)
  • 7 tablespoons (99 g) unsalted butter, melted, divided
  • 1 teaspoon kosher salt
  • 1 large egg, room temperature
  • 3 ½ cups (444.5 g) bread flour
  • ¼ cup (½ stick / 57 g) unsalted butter, softened
  • 2 tablespoons confectioners’ sugar
  • 2 tablespoons honey
  • ½ teaspoon cinnamon

Instructions

  1. Preparing the Yeast Mixture In the bowl of a stand mixer with a dough hook attachment, combine the warm water, 1 teaspoon of sugar, and yeast. Allow it to sit for about 5 minutes until it becomes foamy and bubbly.
  2. Mixing Wet Ingredients Add the remaining sugar, warmed milk, 6 tablespoons of melted butter, and salt to the yeast mixture. Mix until just combined.
  3. Adding the Egg Incorporate the room temperature egg and mix until fully combined.
  4. Incorporating Flour Gradually add the bread flour to the mixture and blend for about 3 minutes on medium-high speed. Scrape the dough to the center of the bowl as needed.
  5. Kneading the Dough Knead the dough on low speed for 3-4 minutes until it becomes smooth and elastic.
  6. First Rise Lightly spray a large bowl with nonstick cooking spray and place the dough inside. Cover it with a clean kitchen towel or plastic wrap and let it rise in a warm area for 1-2 hours, or until it has doubled in size.
  7. Shaping the Rolls Once the dough has risen, gently punch it down to deflate. Divide the dough into 12 equal pieces and shape each into a smooth ball, placing them evenly in the prepared baking dish.
  8. Second Rise Cover the rolls with a kitchen towel and let them rise in a warm spot for about 30 minutes, or until they’ve doubled in size.
  9. Baking Preheat the oven to 350°F. Bake the rolls for 12-15 minutes, or until they turn a beautiful golden brown. Brush with the remaining tablespoon of melted butter immediately after removing them from the oven.
