Ingredients

For the Coffee Sugar Cookies:

  • 1 cup (226 g) unsalted butter
  • 1 tablespoon instant espresso powder
  • 2½ cups (300 g) all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1½ cups (300 g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon (5 ml) vanilla extract

For the Espresso Mascarpone Frosting:

  • 8 oz. (227 g) mascarpone cheese, cold
  • 1½ cups (180 g) powdered sugar
  • 2 teaspoons instant espresso powder
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (237 ml) cold heavy whipping cream
  • 2 tablespoons (10 g) cocoa powder for dusting

Instructions

1. Prepare the Espresso Butter:

Begin by melting the butter in a small bowl. Once melted, whisk in the instant espresso powder until it is fully dissolved. Transfer this mixture to the fridge and let it cool for about 10 minutes.

2. Mix the Dry Ingredients:

In a separate bowl, whisk together the all-purpose flour, cornstarch, baking powder, baking soda, and salt. Make sure the ingredients are well combined to ensure even distribution in the dough.

3. Combine Wet and Dry Ingredients:

In a large mixing bowl, whisk together the cooled espresso butter and granulated sugar until they are well combined. Add the egg and vanilla extract, continuing to whisk until the mixture is smooth and creamy.

Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined. For best results, mix in half of the dry ingredients at a time to prevent overmixing.

4. Preheat and Rest the Dough:

Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper. While the oven preheats, allow the cookie dough to rest for about 30 minutes. This rest period helps to enhance the flavor and texture of the cookies.

5. Bake the Cookies:

Using a medium cookie scoop (about 2 tablespoons), portion out the cookie dough and place the dough balls on the lined baking sheet, spacing them about 3 inches apart.

Bake the cookies for 10-12 minutes, or until the edges are set and the centers are slightly puffed. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.

6. Prepare the Mascarpone Frosting:

While the cookies are cooling, prepare the frosting. In a mixing bowl, whisk the cold mascarpone cheese on low speed until it is smooth. Add the instant espresso powder, vanilla extract, and powdered sugar, mixing until everything is well combined.

Gradually pour in the cold heavy whipping cream while continuing to mix on low speed. Once all the cream has been added, increase the mixer speed to medium and beat for 2-3 minutes until the frosting becomes light and fluffy.

7. Frost the Cookies:

Once the cookies are completely cooled, top each one with 1-2 tablespoons of the mascarpone frosting. Use the back of a spoon or an icing spatula to spread the frosting evenly over the top of each cookie in a circular motion.

Finish by dusting the frosted cookies with cocoa powder for a classic tiramisu touch.

8. Serve and Enjoy:

Your Tiramisu Cookies are now ready to be enjoyed! Serve them with a cup of coffee or espresso for an indulgent treat that captures the essence of tiramisu in every bite.
