30 crepes (double the recipe)
24 oz cream cheese, softened at room temperature
2 cups heavy whipping cream, very cold
1/3 cup espresso shot
1 cup condensed milk
1/3 cup cocoa powder


Instructions

Prepare crepes according to the recipe instructions. An 8-inch diameter is perfect for this recipe.
In a mixing bowl, combine cream cheese, condensed milk, and espresso. Whisk until smooth and creamy.
Add heavy whipping cream and whisk until the cream becomes fluffy. Be cautious as the mixture can turn lumpy.
Set aside 2 cups of the cream mixture for frosting the outside of the cake. Refrigerate in a sealed container.
Assemble the cake in a springform pan lined with plastic wrap at the bottom. Start with a crepe, add a layer of the cream mixture, and dust with cocoa powder. Repeat until all crepes and cream are used.
Refrigerate the assembled cake for at least 24 hours.
To serve, invert the cake onto a plate, remove the springform sides, and frost with the reserved cream. Dust the top generously with cocoa powder.
