- 12.8 oz box Rice or Corn Chex Cereal
- 3 cups assorted nuts (pecans, almonds, peanuts, etc.)
- 3 cups pretzel thins or mini knots
- 1 cup unsalted butter
- 2 cups dark brown sugar
- 3/4 cup light corn syrup
- 1 tsp salt
- 2 tsp pure vanilla extract
- 1 tsp baking soda
Instructions
- Preheat your oven to 250F and position 2 racks near the center. Line 2 baking sheets with aluminum foil and coat them generously with cooking spray.
- In a large mixing bowl, combine the entire box of cereal, assorted nuts, and pretzels. Set this mixture aside.
- In a large saucepan over medium heat, melt the unsalted butter. Once melted, add in the dark brown sugar, light corn syrup, and salt. Stir often and bring the mixture to a boil.
- Allow it to boil for 2 minutes, then remove it from the heat.
- Carefully mix in the pure vanilla extract and add the baking soda, stirring thoroughly. The toffee will foam, but continue mixing until well combined.
- Pour the hot toffee over the cereal, nuts, and pretzels. Gently fold to coat evenly, ensuring you work from the bottom up to avoid burns from the hot toffee.
- Spread the mixture evenly across the two baking sheets. Bake for 30-55 minutes, stirring every 15 minutes. Bake for 30 minutes for a chewier texture or up to 55 minutes for a crispier toffee.
