- 1 French baguette, sliced into ¼-inch slices
- 3 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 3 vine tomatoes, diced
- ½ small white onion, chopped
- 2–3 tablespoons fresh basil, chopped
- Juice from ¼ lemon
- Salt and pepper, to taste
- Shredded Parmesan cheese, for garnish (optional)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Sauté the Garlic: In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant and golden. Remove from heat and set aside.
- Prepare the Tomato Mixture: In a mixing bowl, combine the diced tomatoes, chopped onion, and fresh basil. Add the sautéed garlic along with any remaining olive oil from the skillet. Squeeze the juice of ¼ lemon over the mixture, season with salt and pepper, and stir well. Chill the mixture in the refrigerator while you prepare the baguette slices.
- Prepare the Baguette Slices: In a small bowl, mix the remaining 2 tablespoons of olive oil with a pinch of salt and pepper. Arrange the baguette slices on a baking sheet, brush each slice with the seasoned olive oil, and bake for about 8 minutes or until the edges are lightly browned and crisp.
- Assemble the Bruschetta: Once the baguette slices are ready, top each one with a spoonful of the tomato mixture. For an optional garnish, sprinkle a little shredded Parmesan cheese over each bruschetta.
