Ingredients
8 ounces uncooked spaghetti
1 pound uncooked shrimp (31–40 per pound size), thawed & peeled (tails can be removed)
1 tablespoon olive oil
2 tablespoons butter
4 cloves garlic, minced
10 ounces grape tomatoes, cut into halves
1/4 cup chicken broth
1/4 teaspoon Italian seasoning
2 cups (packed) fresh baby spinach
Salt & pepper, to taste
Instructions
Boil a salted pot of water for the pasta and cook it al dente according to package directions.
Meanwhile, add the olive oil and butter to a skillet over medium-high heat. Once the pan is hot, add the minced garlic and cook for about 30 seconds until fragrant.
Stir in the halved grape tomatoes, chicken broth, and Italian seasoning. Cook the tomatoes, stirring occasionally, until they begin to soften and lose their shape, about 5 minutes.
Add the shrimp to the skillet, followed by the fresh spinach. Reduce the heat to medium and cook for about 5 minutes, stirring occasionally until the shrimp are cooked through and the spinach has wilted.
Season the sauce with salt and pepper to taste. Toss the cooked and drained spaghetti with the shrimp and tomato mixture. If you prefer a little more liquid in the sauce, add a splash of the reserved hot pasta water.
Serve immediately, garnished with additional parmesan cheese or fresh herbs if desired.
