Ingredients
10 oz tortellini, cooked according to package instructions 🍝
1 (16 oz) jar of roasted red peppers, drained and roughly chopped 🌶️
1 tbsp tomato paste 🍅
1/3 cup vegetable stock 🥕
1 tbsp olive oil 🫒
1/4 cup finely diced yellow onion 🧅
2–3 garlic cloves, minced 🧄
1/2 tsp red pepper flakes, or more to taste 🌶️
1/2 tsp salt 🧂
Pinch of black pepper 🌑
1/2 cup heavy cream 🥛
1/4 cup grated parmesan 🧀
8 oz burrata 🧀
Fresh chopped basil to taste 🌿
Instructions
1️⃣ In a blender or food processor, combine roasted red peppers, tomato paste, and vegetable stock. Set aside. 🥤
2️⃣ Add olive oil to a skillet over medium heat. Add onion and let cook for 4 minutes, stirring occasionally. 🥄
3️⃣ Add garlic and red pepper flakes and cook for about another minute, stirring frequently. 🍲
4️⃣ Add the roasted red pepper mixture to the skillet. Bring to a simmer and let cook for 5 minutes. 🍳
5️⃣ Reduce heat to medium-low and add salt, pepper, heavy cream, and parmesan. Whisk together until smooth and combined. 🍜
6️⃣ Toss in the tortellini and cook for another 1-2 minutes. 🍝
7️⃣ Break apart the burrata balls and add to the tortellini. Top with fresh chopped basil and enjoy. 🍃🧀
