Ingredients
10 oz tortellini, cooked according to package instructions π
1 (16 oz) jar of roasted red peppers, drained and roughly chopped πΆοΈ
1 tbsp tomato paste π
1/3 cup vegetable stock π₯
1 tbsp olive oil π«
1/4 cup finely diced yellow onion π§
2–3 garlic cloves, minced π§
1/2 tsp red pepper flakes, or more to taste πΆοΈ
1/2 tsp salt π§
Pinch of black pepper π
1/2 cup heavy cream π₯
1/4 cup grated parmesan π§
8 oz burrata π§
Fresh chopped basil to taste πΏ
Instructions
1οΈβ£ In a blender or food processor, combine roasted red peppers, tomato paste, and vegetable stock. Set aside. π₯€
2οΈβ£ Add olive oil to a skillet over medium heat. Add onion and let cook for 4 minutes, stirring occasionally. π₯
3οΈβ£ Add garlic and red pepper flakes and cook for about another minute, stirring frequently. π²
4οΈβ£ Add the roasted red pepper mixture to the skillet. Bring to a simmer and let cook for 5 minutes. π³
5οΈβ£ Reduce heat to medium-low and add salt, pepper, heavy cream, and parmesan. Whisk together until smooth and combined. π
6οΈβ£ Toss in the tortellini and cook for another 1-2 minutes. π
7οΈβ£ Break apart the burrata balls and add to the tortellini. Top with fresh chopped basil and enjoy. ππ§
