1 tbsp olive oil πŸ«’
1/4 cup finely diced yellow onion πŸ§…
23 garlic cloves, minced πŸ§„
1/2 tsp red pepper flakes, or more to taste 🌢️
1/2 tsp salt πŸ§‚
Pinch of black pepper πŸŒ‘
1/2 cup heavy cream πŸ₯›
1/4 cup grated parmesan πŸ§€
8 oz burrata πŸ§€
Fresh chopped basil to taste 🌿


Instructions

1️⃣ In a blender or food processor, combine roasted red peppers, tomato paste, and vegetable stock. Set aside. πŸ₯€

2️⃣ Add olive oil to a skillet over medium heat. Add onion and let cook for 4 minutes, stirring occasionally. πŸ₯„

3️⃣ Add garlic and red pepper flakes and cook for about another minute, stirring frequently. 🍲

4️⃣ Add the roasted red pepper mixture to the skillet. Bring to a simmer and let cook for 5 minutes. 🍳

5️⃣ Reduce heat to medium-low and add salt, pepper, heavy cream, and parmesan. Whisk together until smooth and combined. 🍜

6️⃣ Toss in the tortellini and cook for another 1-2 minutes. 🍝
