2 cups old-fashioned oats
1/2 cup chopped nuts (walnuts or almonds)
1/3 cup honey or maple syrup
1 teaspoon baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
2 cups milk
1 large egg
3 tablespoons melted butter
2 teaspoons vanilla extract
12 ripe bananas, sliced
1 1/2 cups berries (blueberries, raspberries, or mixed)


Instructions

Preheat oven to 375°F (190°C).
In a large bowl, mix together the oats, half of the nuts, baking powder, cinnamon, and salt.
In another bowl, whisk together the honey, milk, egg, melted butter, and vanilla extract.
Arrange the banana slices in a single layer at the bottom of a baking dish.
Sprinkle two-thirds of the berries over the bananas, then cover with the oat mixture.
Slowly drizzle the milk mixture over the oats. Gently tap the dish on the counter to ensure the milk moves through the oats.
Scatter the remaining berries and nuts over the top.
Bake for 35-40 minutes, until the top is golden and the oatmeal is set.
Let cool slightly before serving.
