For the marinade:
1½ cups ketchup
¾ cup sweet chili sauce
1/3 cup soy sauce / tamari sauce
2 tsp crushed garlic
2 tsp finely minced ginger
12 tsp salt

For the skewers:

750 g (approximately lbs) chicken thighs, skinless, boneless
1 pineapple, peeled, cored, and cubed into 23 cm chunks
2 red bell peppers, seeded and cubed into 23 cm chunks
1 red onion, cubed into 23 cm chunks


Instructions

Marinade Preparation: In a medium bowl, combine ketchup, sweet chili sauce, soy sauce, crushed garlic, minced ginger, and salt; mix well.
Prepare Chicken: Cut chicken into bite-sized pieces and place in a large bowl. Reserve one-third of the marinade for later use, and pour the remaining over the chicken. Cover and refrigerate to marinate for at least 30 minutes, up to 24 hours.
Skewer Assembly: Soak bamboo skewers in boiling water for 10 minutes (or use metal skewers). Thread marinated chicken, pineapple chunks, red bell pepper, and onion onto the skewers.
Cooking: Preheat a grill or grill pan. Cook the skewers over medium heat until golden brown and the chicken is fully cooked, approximately 10-15 minutes, turning occasionally. Use the reserved marinade to glaze skewers while cooking.
Rest: Remove skewers from heat and let rest for 5 minutes before serving.
