Description

Tzatziki Avocado Salmon Rolls combine the creamy zest of tzatziki with the rich flavors of smoked salmon and the freshness of avocado and cucumber, creating an appetizer that’s as delightful to the palate as it is to the eye. Each element of the dish complements the others, with the tzatziki providing a tangy base that enhances the smooth, buttery avocado and the distinctly flavored salmon.

1 English cucumber
2 tablespoons tzatziki sauce
2 tablespoons minced chives, divided (plus extra whole chives for garnish)
Juice from ¼ lime
½ ripe avocado, peeled and sliced
5 oz (150 grams) cold-smoked salmon (lox)
2 tablespoons sesame seeds (mix of white and black preferred)


Instructions

Cut 12 rounds from the cucumber to serve as bases for the salmon rolls. Use the remaining cucumber to cut 8 thin strips, removing the seeds.
In a small bowl, combine tzatziki, 1 teaspoon of minced chives, and lime juice.
Lay a piece of plastic wrap, approximately 16 inches long, on your table. Arrange the smoked salmon slices on top, overlapping them to form a 12″x7″ rectangle. Gently press down to ensure they stick together.
Spread the tzatziki mixture evenly over the salmon. Place avocado slices down the center, top with cucumber strips, and sprinkle the remaining chives over.
Using the plastic wrap for assistance, tightly roll the salmon. Then, sprinkle sesame seeds evenly over the roll.
Chill the salmon roll in the refrigerator for 15-30 minutes to firm up for easier slicing.
Slice the salmon roll into 12 pieces. Place each piece on a cucumber round and garnish with two small chives.
