Ingredients
1 lb macaroni
16 oz sharp cheddar cheese (block or shredded)
1 ¼ cups milk
½ cup flour
¼ cup butter
2 eggs
3 cups seasoned bread crumbs
Salt & pepper to taste
Vegetable oil for frying
Instructions
Boil macaroni until tender, drain and set aside. Shred cheese and set aside.
In a large pan, melt butter over medium heat. Add flour and mix until it turns light brown to make a roux.
Add 1 cup milk and whisk until thick.
Gradually add cheese, stirring until melted and smooth.
Incorporate the cooked macaroni, mixing well. Season with salt and pepper.
Transfer to a container and refrigerate for at least 1 hour, or until cold.
Form the chilled macaroni and cheese into 1-inch balls and place on a wax or parchment-lined baking sheet. Freeze for at least 1 hour (overnight is best).
Beat eggs and mix with ¼ cup milk to make an egg wash.
Dip balls into egg wash, then roll in bread crumbs to coat completely.
Heat oil in a deep fryer to 320°F or in a skillet with oil about ½-3/4 inch deep, heated over medium-high.
Fry for 3-4 minutes until golden and drain. Serve immediately.
