1½ cups granulated sugar
¾ cup all-purpose flour
⅔ cup cocoa powder, sifted if lumpy
½ cup powdered sugar, sifted if lumpy
½ cup dark chocolate chips
¾ teaspoon sea salt
2 large eggs
½ cup extra-virgin olive oil
2 tablespoons water
½ teaspoon vanilla extract


Instructions

Preheat the oven to 325°F (163°C). Lightly spray an 8×8 inch baking dish with non-stick cooking spray and line it with parchment paper.
In a medium bowl, whisk together granulated sugar, all-purpose flour, sifted cocoa powder, sifted powdered sugar, dark chocolate chips, and sea salt.
In a separate large bowl, whisk eggs, extra-virgin olive oil, water, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
Pour the batter into the prepared baking dish, using a spatula to smooth the top evenly.
Bake for 40 to 45 minutes, or until a toothpick inserted comes out with a few moist crumbs.
Allow to cool completely in the pan before slicing into squares. Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
