Ingredients
1 egg
1/2 cup milk
1/4 cup canola oil
1 1/2 cups all-purpose flour
1/2 cup sugar
2 tsp baking powder
2 tsp Vanilla Chai Spice blend
1/2 tsp salt
Coarse sanding sugar for topping (optional)
Instructions
Preheat your oven to 400°F (200°C). Spray a 6-well muffin pan with cooking spray and set aside.
In a large bowl, whisk together the egg, milk, and canola oil until well combined.
Add flour, sugar, baking powder, Vanilla Chai Spice, and salt to the wet mixture. Stir until just combined—do not overmix.
Using a large cookie scoop, evenly distribute the batter among the 6 muffin wells. Sprinkle the tops with coarse sanding sugar if desired.
Bake for 18-20 minutes, or until the tops are golden brown and set.
Remove from the oven and let the muffins cool in the pan for 10 minutes. Transfer to a wire rack to cool completely. Serve and enjoy!
