1 ½ cups all-purpose flour
¾ teaspoon baking powder
½ teaspoon Kosher salt
½ cup unsalted butter, room temperature
½ cup confectioners’ sugar
¼ cup granulated sugar
1 large egg, room temperature
1 tablespoon vanilla extract
1 tablespoon whole milk


Instructions

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, sift together the all-purpose flour, baking powder, and Kosher salt. Set aside.
In the bowl of a stand mixer, cream together the room-temperature butter, confectioners’ sugar, and granulated sugar on medium speed for at least 2 minutes. Scrape down the sides of the bowl as needed to ensure even mixing.
Add the egg, vanilla extract, and whole milk to the butter mixture. Blend until the mixture is smooth and fluffy, about 30 seconds.
Gradually add the sifted flour mixture to the wet ingredients, mixing on low speed until fully incorporated.
Chill the batter in the refrigerator for 10-15 minutes to make it easier to handle.
Scoop 1/2 teaspoon-sized dollops of the batter and place them about 1 inch apart on the prepared baking sheet.
Bake the wafers in the preheated oven for 12-15 minutes, rotating the pan halfway through baking. The cookies should be golden brown around the edges.
Allow the vanilla wafers to cool completely on a wire rack before serving.
