1 tablespoon cornstarch
1 tablespoon chili powder
1 teaspoon oregano, dried
1 teaspoon paprika
1 1/2 cups warm unsweetened almond milk

1/2 cup tomato sauce
2 cups rotini pasta
1/2 teaspoon salt
1/4 teaspoon pepper
1 to 1 1/2 cups of shredded vegan cheddar cheese

Instructions
Heat oil in a large skillet over medium-high heat. Add onions and garlic, sautéing until softened.
Add vegan ground beef, breaking it apart as it cooks, about 6 minutes.
In a small bowl, combine cornstarch, chili powder, oregano, paprika, salt, and pepper. Sprinkle over the beef mixture and stir well.
Pour in almond milk, vegan beef broth, and tomato sauce. Add pasta, bringing to a boil. Reduce to a simmer, cover, and cook until pasta is al dente, about 10-12 minutes.
Stir in vegan cheese until melted. Garnish with parsley if using.
