7 cups whole wheat biscuit cereal (e.g., Kashi Whole Wheat Biscuit Cereal)
1 cup dairy-free dark chocolate chips
⅔ cup cashew butter
⅔ cup coconut sugar
23 tablespoons arrowroot powder (optional)


Instructions

In a skillet, melt the chocolate chips and cashew butter together until smooth. If the mixture is too thick, add a teaspoon of coconut oil to achieve a thinner consistency.
While melting the chocolate and cashew butter, turn the coconut sugar into a powder. Blend the coconut sugar in a food processor or blender until it reaches a powdery consistency, about 2-5 minutes. Optionally, mix in a tablespoon of arrowroot powder at the end to mimic powdered sugar.
In a large mixing bowl, add the whole wheat biscuit cereal. Pour the melted chocolate mixture over the cereal and stir to coat evenly. Add more cereal in ¼ cup increments if needed.
Spread the coated cereal onto a baking sheet lined with parchment paper. Evenly sprinkle about ½ cup of the powdered coconut sugar over the cereal. Refrigerate for about 10 minutes to cool.
After cooling, sprinkle the remaining powdered coconut sugar over the cereal. Store in an airtight container in the fridge for up to a week or on the counter for 4 days.
