Description

These Vegetable Chickpea Fritters are a vibrant and delicious way to enjoy a healthy, plant-based meal. The addition of corn and bell peppers adds a sweet crunch that complements the creamy chickpea base, while the spices offer a warm, inviting aroma.


Ingredients

1 (15 oz) can chickpeas, drained and rinsed
½ medium onion
2 cloves garlic
Juice of ½ lime
1 tsp onion powder
1 tsp ground cumin
½ tsp ground oregano
½ tsp smoked paprika
¼ tsp red pepper flakes
½ tsp salt
Black pepper to taste
½ cup (6080 g) chickpea flour or rice flour
1 medium bell pepper, chopped
1 cup (150 g) corn, fresh or canned
23 tbsp chopped parsley
Oil for frying
Vegan cheese (optional)


Instructions

Prepare the vegetables: Peel and roughly chop the onion, finely dice the bell pepper, and chop the parsley.
In a food processor, combine the chickpeas, onion, garlic, lime juice, and spices. Pulse about 5-6 times until the mixture reaches a crumb consistency.
Add the flour to the food processor and pulse 2-3 times until just combined. Be careful not to over-process into a smooth paste.
Incorporate the bell pepper, corn, and parsley by pulsing 2-3 times. If the mixture is over-processed, add more flour. If the mixture is too dry, add a little liquid from the chickpea can.
Form the mixture into 8 patties, each about 90 grams and 1/2-inch thick.
Heat oil in a large skillet over medium-high heat. Fry the patties until golden brown and crispy on both sides.
Serve the fritters hot with a vegan cashew dip or your choice of sauce.
