Ingredients
Caramelized Tomatoes
250 grams cherry tomatoes
1 tbsp olive oil
1 tsp brown sugar
A pinch of salt
Whipped Chèvre
200 grams fresh goat cheese
60 grams plain yogurt or fromage blanc
A drizzle of olive oil
Zest of 1 lemon
Salt and pepper to taste
For Serving
Fresh basil
Toasted bread, breadsticks, etc., as desired
Instructions
Preheat your oven to 180°C (static heat).
Halve the cherry tomatoes and mix them in a bowl with olive oil, salt, and sugar.
Spread the tomatoes on a baking dish and roast in the oven for about 15-18 minutes.
While tomatoes are roasting, combine the fresh goat cheese, yogurt, olive oil, lemon zest, salt, and pepper in a bowl and whip until smooth.
Spoon the whipped cheese onto a serving dish, top with the caramelized tomatoes and fresh basil. Season further if necessary.
Serve immediately with toasted bread or store in the fridge for a few hours before serving.
