This Mediterranean Bliss Salad combines the creamy textures of white beans and artichokes with the sweet tang of caramelized tomatoes, creating a dish that’s not only visually appealing but also bursts with flavor. The fresh basil and lemon add a bright, zesty note, perfectly balancing the richness of the feta and the nuttiness of the toasted almonds.
Ingredients
15 cherry tomatoes
1 tbsp olive oil
1 tsp brown sugar
A pinch of fleur de sel
1 fresh red onion
1 can white beans (240g drained)
1 jar grilled artichokes (190g)
30g slivered almonds
50g feta cheese
Fresh basil
1/2 lemon
Black pepper
A drizzle of olive oil
A drizzle of white (or classic) balsamic vinegar
Instructions
Preheat the oven to 375°F (190°C).
Halve the cherry tomatoes and toss them in a bowl with olive oil, brown sugar, and a pinch of fleur de sel.
Roast in the oven for about 12-15 minutes.
If the slivered almonds are not already toasted, toast them in a hot pan for 1-2 minutes until golden.
Thinly slice the red onion.
Rinse the white beans.
When the tomatoes are caramelized, assemble the salad: combine white beans, sliced onion, artichokes, and caramelized tomatoes, mixing well to blend the flavors.
Add crumbled feta, toasted almonds, a squeeze of lemon juice, and fresh basil.
Finish with a drizzle of olive oil and balsamic vinegar. Serve and enjoy!
